Oreo Cupcakes with Chocolate Oreo Buttercream Frosting








OREO CUPCAKES - Makes 20 cupcakes


INGREDIENTS

  • 2 cups all purpose flour

  • 1 cup granulated sugar

  • 1/4 tsp baking soda

  • 1 tsp baking powder

  • 3 egg whites

  • 1 tsp vanilla extract

  • 1/2 cup sour cream, at room temperature

  • 1/2 cup whole milk, at room temperature

  • 1 cup crushed oreos

  • 20 whole oreos

Instructions:

  • Prepare 2 muffin pans with liners.

  • In the bowl of your stand mixer, use your paddle attachment. Add the butter and beat until smooth.

  • Add the flour, sugar, baking soda and baking powder and beat until mixed together.

  • In a small bowl, whisk together the egg whites, vanilla extract, sour cream and whole milk.

  • Add the wet ingredients into the stand mixer bowl and mix until incorporated.

  • Fold in the crushed oreos.

  • Place one whole oreo in the bottom of each muffin tin. Then add about 2 tbsps of cupcake batter.

  • Bake for approximately 16 - 18 minutes or until a toothpick comes our clean.

  • Let cool before frosting.


Chocolate Oreo Buttercream


INGREDIENTS

  • 1 1/2 cups unsalted butter, softened

  • 6 cups powdered sugar

  • 1/3 cup cocoa powder

  • 2 tsps vanilla extract

  • 4 tbsps whole milk

  • 1 cup crushed Oreos

Instructions:

  • In the bowl of your stand mixer, use your paddle attachment. Add the butter and beat until smooth.

  • Add powdered sugar, cocoa powder, vanilla and milk. Mix on low until combined.

  • Turn speed up to medium and beat for 1-2 minutes.

  • Add crushed oreos and mix until combined.

  • Place buttercream in a piping bag with the desired tip and frost your cupcakes!
