OREO CUPCAKES - Makes 20 cupcakes
INGREDIENTS
2 cups all purpose flour
1 cup granulated sugar
1/4 tsp baking soda
1 tsp baking powder
3 egg whites
1 tsp vanilla extract
1/2 cup sour cream, at room temperature
1/2 cup whole milk, at room temperature
1 cup crushed oreos
20 whole oreos
Instructions:
Prepare 2 muffin pans with liners.
In the bowl of your stand mixer, use your paddle attachment. Add the butter and beat until smooth.
Add the flour, sugar, baking soda and baking powder and beat until mixed together.
In a small bowl, whisk together the egg whites, vanilla extract, sour cream and whole milk.
Add the wet ingredients into the stand mixer bowl and mix until incorporated.
Fold in the crushed oreos.
Place one whole oreo in the bottom of each muffin tin. Then add about 2 tbsps of cupcake batter.
Bake for approximately 16 - 18 minutes or until a toothpick comes our clean.
Let cool before frosting.
Chocolate Oreo Buttercream
INGREDIENTS
1 1/2 cups unsalted butter, softened
6 cups powdered sugar
1/3 cup cocoa powder
2 tsps vanilla extract
4 tbsps whole milk
1 cup crushed Oreos
Instructions:
In the bowl of your stand mixer, use your paddle attachment. Add the butter and beat until smooth.
Add powdered sugar, cocoa powder, vanilla and milk. Mix on low until combined.
Turn speed up to medium and beat for 1-2 minutes.
Add crushed oreos and mix until combined.
Place buttercream in a piping bag with the desired tip and frost your cupcakes!
